It’s strange, then, that a lot of what we eat is not actually food but, according to Michael Pollan, “edible food like substances are no longer the products of nature but of food science.” The irony, which Pollan details in his book, In Defense of Food, is that “the more we worry about nutrition, the less healthy we seem to become.”
Michael Pollan also visited the John Adams Institute in 2013 and 2018.
